Soups
Easy Veggie Beef Soup:
~ 3 Packages frozen mixed veggies ~ 1 lbs cooked ground beef/turkey, drained ~ 2-3 packages beef stew seasoning(to taste)
1. Mix all in large pot. Cook for 30 mins to heat through.
* Serve with cornbread and salad. ** or Serve in bread bowls
Easy Loaded Potato Soup:
~ 5lb bag Potatoes, peeled and cubed ~ 2 Cartons of Chicken broth ~ small carton heavy cream
~crumbled bacon ~ sour cream ~shredded cheddar cheese
opt- fresh baked bread or crackers
1. Put potatoes in large stock pot, cover with broth, and boil until tender.
2. Mash slightly with potato masher, leave a few cubed potatoes.
3. Add heavy cream, stir and simmer. Add more cream if desiring a thinner soup
* Serve with sour cream, bacon, cheese....we also eat it with saltine crackers
Easy Taco Soup:
~1 can balck beans ~ 2 cans diced tomatoes ~ 1 can corn, or mexi-corn ~ 1 can kidney beans ~1 can pinto beans(opt) ~ 1lb ground turkey ~ 1 package dry ranch seasoning or 1 cup ranch dressing ~1 can green chilies
1.Cook ground turkey with onion and drain.
2.Pour all ingredients in large stock pot. Fill with water.
3.Simmer for 30 mins-1 hour.
*Serve with tortilla chips, sour cream, salsa, guacomole
Easiest Chili:
3 cans diced tomatoes ~3 cans kidney beans ~ 2 small cans tomato sauce ~2-3 packets chili seasoning, depending on taste ~2 lbs ground turkey, cooked and drained
1. Combine all. Simmer for 30 mins.
*Serve with crackers or cornbread, or fritos or even cooked elbow noodles(makes it go further for larger crowd)
Polish Soup
~1 soup bone (found at a butcher or use 4 beef bouillion cubes)
~2 cans diced tomatoes(you can use whole or fresh,diced)
~1 bunch of celery, all of it chopped, remove the end- keep the leaves.
~Pickling Spice
~water
~1 tsp salt
~Dumplings, egg noodles, or rice
1. In a very large stock pot, fill with water and soup bone. Simmer 1 hour.
2. Remove soup bone, add tomatoes and celery.
3 Put pickling spice in a metal tea diffuser, or a cheesecloth(golf ball size amount)
4. Simmer a few hours.(add more salt and pepper to taste)
5. Serve with dumplings, egg noodles, or rice and grilled cheese sandwiches
