Christmas Side Dishes
Pistachio Salad
1 3 oz pkg Pistachio instant pudding mix
1 20 oz can crushed pineapple with juice
1 C nuts(pecan, walnuts)
1C mini marshmallows
1 8 oz cool whip
1. Mix well. Serve chilled.
Grape salad
8 oz cream cheese, room temp.
2/3 C sour cream
1 TBSP vanilla
½ C sugar
2 C red seedless grapes, whole or halved
2 C green seedless grapes, whole or halved
½ C brown sugar
½ C chopped pecans, opt
1. Mix cream cheese, sour cream, vanilla, and sugar until smooth.
2. Stir in grapes.
3. Top with brown sugar and pecans.
4. Serve chilled.
Broccoli Salad
2 bunches broccoli, chopped
5 slices of bacon, cooked and chopped
2/3 C raisins
½ C onions, chopped
½ sunflower seeds
Dressing:
1 C mayo
¼ C sugar
2 TBSP apple cider vinegar
1. Combine all.
2. Make dressing separate. DO NOT add dressing until serving.
Scalloped Corn
1 can whole kernel corn
1 can cream corn
1 egg, beaten
1 small onion, chopped
1 package crackers, crushed
1 small carton heavy cream
½ stick butter
1. Mix all except crackers, then mix in a some of the crackers
2. Slice a few slices of butter and add. In mix and on top.
3. Top with the rest of the crackers
4. Bake3 375 degrees for 30 minutes, if it is still “soupy” bake longer. If it browns on top, cover with foil.
