Ingredients-
cake-
1 c chopped dates/ 1 8 oz bag
1 c chopped pecan pieces
1 tbsp pure vanilla
3 tbsp cocoa powder
frosting-
1 c chopped dates/ 8 oz bag
2 tbsp melted coconut oil
1 tsp each of cinnamon and nutmeg
1 tsp pure vanilla
1 c water
1. In a blender, blend cake ingredients. Press into a spring form pan. Press the edges up a little to make a little bowl inside. Put in fridge for a few hours, or even overnight.
2. In blender, add frosting ingredients. Slowly add the water as you blend to get the desired frosting consistency. You can wait to do this a few hours after making the cake.
3. To set up cake- take out of spring form pan, but leave the metal bottom. Pour the frosting on top. Smooth evenly with a spoon, letting it over flow on some of the edges.
