Baking Day Planning

A few posts ago I talked about having a baking/cooking day. I have been planning breakfasts, dinners, and desserts to prepare and freeze. The wintertime is getting near. Holidays, cold weathers, and for me- a new baby after February. I actually have never done a BIG baking day in one day, so you can come right along side me. I have so many that I want to do, so I am breaking them up in two days. Because I have a large family with all boys that eat A LOT, one batch of cookies is not going to be enough. I will be doubling most of the recipes to freeze. When I start my day I will be taking pictures and posting link to the recipes (with pictures) along the way. Remember, if you are doing a big baking day, send me your ideas by posting in the comments or emailing me. I'd love to see what everyone else is doing!
 Day1:
1. pumpkin bread
2. pumpkin cookies
3. pumpkin muffins
4. pumpkin chocolate chip cookies
5. banana bread
6. banana muffins
7. chocolate chip pancakes
8. shepherds pie(2)
9. spaghetti pie (2)
10. meatballs ( 2 family size servings)
11. sante fe soup (2)
12. sausage ball
13. chicken poppy seed casserole (2)

Day 2:
1. Breakfasts quiches/fritatas( 2)
2. no bake cookies
3. oatmeal chocolate chip cookies
4. apple sauce
5. taco soup(2)
6. chili (2)
7. lasagna (2)
8. refried beans(a whole bag of beans, divided into serving containers)
9. meatloaf (2)
10. beef and veggie soup(2) 
11. quesadillas ( a few snack size and meal servings)
12. fajita filling (2)
13. apple pie (2)

Groceries List:
1. spice cake mix -4
2. can pumpkin -4
3. bananas
4. choc. chips - 2 large bags
5. mixed vegs - 4 large bags
6. angel hair pasta -2 
7. spag sauce -4
